- Salad green chopped roughly
- Cubed, grilled butternut
- Raw or grilled, cubed beetroot
- Cucumber chopped
- Salad cheese – soft feta, goats cheese or blue cheese, whatever you like
- Optional: some finely chopped nuts and/or pumpkin seeds
- Toss with extra virgin olive oil and a balsamic reduction
