  • Salad green chopped roughly
  • Cubed, grilled butternut
  • Raw or grilled, cubed beetroot
  • Cucumber chopped
  • Salad cheese – soft feta, goats cheese or blue cheese, whatever you like
  • Optional: some finely chopped nuts and/or pumpkin seeds


  • Combine
  • Toss with extra virgin olive oil and a balsamic reduction
