For the protein, feel free to use any you choose: chicken, cooked salmon, stir-fry beef or a vegan option like tofu, legumes or seeds. Makes an awesome dinner meal in summer.


  • Salad greens chopped roughly
  • Cucumber sliced or cubed
  • Avocado cubed
  • Beetroot grated
  • Carrots grated
  • Protein of your choice
  • Salad cheese – feta cheese, goats cheese, blue cheese, whatever you like
  • Optional: pumpkin and/or sunflower seeds


  • Combine.
  • Toss with extra virgin olive oil and optional balsamic vinegar.
  • Refrigerate until needed.

Low carb adjustment

This is LCHF diet suitable. Careful with the seeds.
